Baked Stuffed Mussels

Here’s one easy but impressive dish you can cook at home. Prepping the mussels take way longer than actually cooking it, so you will need patience. For the stuffing, you can use potatoes or sweet potato. You can also skip the stuffing if you want to make it a little lighter.

You will need about a kilo of mussels. Wash them, and remove the beard (the green fibrous material that’s usually lodged in between the shells). Personally, I also like removing any dirt on the shell. You can leave them soaking on a pot of water. After an hour or so, remove them from the water and rinse and drain them.

Boilt them until the shells open. Make sure you season the water. I usually add ginger, salt, and pepper. You can add lemon soda for a hint of sweetness.

Once the mussels are cooked, discard the pieces that did not open during cooking. Next, remove the top part of the shell. Set the mussels aside.

You can do the stuffing ahead of time. Wash and peel about 1 large or 2 medium potatoes. Slice them into smaller pieces so they cook quicker. Boil them in salted water until they are super soft. This may take about 10 to 15 minutes. Once cooked, mash them with a fork or a potato masher. Add about 2 tablespoons of butter and 1/4 cup of milk. Add some granulated garlic and parmesan cheese, salt, andย  pepper.You can add some dried herbs. Set the mashed potato aside.

Grate or slice some cheese. It’s almost time to assemble.

Pre-heat your toaster, toaster oven, turbo broiler or oven to 180 degrees. it’s time to assemble ๐Ÿ™‚

Get a mussel and spoon some mashed potato. Try to pack the mashed potato very well so the shell is really stuffed. Add cheese on top. You can add more parmesan to make the top crispy. Do this on all the mussels.

Place the mussels on the oven for 10 minutes or until golden brown. You might want to keep an eye on this so it does not burn. Remember that all the elements of the dish are already pre-cooked.

Cool them before serving, because the cheese will be piping hot.
